African Salad, also known as Abacha is one of the most popular Eastern Nigeria side dish or snack.It is made with dried shredded cassava(Abacha) and fermented oil bean seeds(Ugba).
Okpa is an Eastern Nigerian delicacy prepared with a special type of beans (Bambara bean). It is a life saver to say but the least. (Ask people who schooled in the East or the ones who live in Enugu)

This is basically roasted yam and oil with ukpaka (oil bean seed), onions and spices.
