How To Make Quality Red Velvet Cake


I don’t know how old red velvet cake is but i know it’s not been too long it started to trend in Nigeria, 7 years tops. I remember the first time i tasted red velvet cake with cream cheese topping i mistook it for chocolate cake but then the texture and taste was somewhat different, anyways after that day i was hooked.

Then Nigerians started to make it and they started to make rubbish, some would make normal cake and add red coloring to it (as if we are fools who wouldn’t know), and restaurant that sold it gave it to us fat an over priced rate, it was then i decided to learn it and make it on my own.


1/2 cup Unsalted butter or Shortening
1 1/2 cup White Sugar
2 Eggs
2 tbsp Cocoa Powder
1/2 tsp Salt
1 cup Buttermilk or make it (add 1tbsp white vinegar to 1 cup of Fresh milk and stand for 30mins)
1 tsp Vanilla Extract
2 1/2 cup Flour
1 tsp Baking Soda
1 tsp White Vinegar

2 cups Unsalted Butter
2 cups of Cream Cheese
1 tbsp Vanilla Extract
3 cups Icing Sugar

Cream the Shortening and the Sugar till it is well blended
Break the Eggs and add to the mixture
Make a paste out of Cocoa Powder and Red Food Colour
Add the paste to the batter and mix properly
Add the Salt to the Flour
Add the Flour to the batter alternating with the Buttermilk
Mix Baking Soda and the Vinegar and Stir properly
Add the Soda and Vinegar mixture to the batter and Mix



Use an electric mixer to cream the butter until it is light and fluffy
Add the cream cheese and mix until the butter and cream cheese are well combined
Add Icing sugar and mix some more
Add the vanilla flavour and mix well
Spread on the Cake
