Rice and coconut go “hand in hand” throughout all the Asia. Growing of these plants is suitable for the same climate, so it is not surprising that they so often occur together in different dishes. Today we will prepare one of the most simple side dishes — rice with coconut milk.

Coconut rice is not only and not so much a dessert as it might seem at first. In many national cuisines conventional Jasmine rice is cooked with coconut milk or coconut flakes and served as a side dish.
Coconut rice preparation

Recipe for coconut rice
The best variety of rice for this dish — Thai Jasmine. If it is not available, you can take basmati or any other long grain rice.
The ratio of rice and liquid should typically be about 1:1.25 to 1:1.5, it depends on the type and rice storage mode. If specified amount of liquid in the recipe is not enough, you will need to add some water.
You can combine coconut milk and water in different ways and proportions: if you want more intense coconut flavor, pour more milk. If you opt for a more slight version — take more water.
Below I’ll give you Nigerian coconut rice recipe, but if you need sweet coconut rice recipe, just replace garlic and ginger with a tablespoon of sugar.
- Long grain rice: 1.5 cups
- Coconut milk: 1 Cup
- Water: 0.5 cups
- Coconut: 1 tablespoon
- Garlic: 2 cloves
- Ginger: 2 cm piece
- Salt: 1 pinch
- Sugar: 1 teaspoon
- Vegetable oil: 1 tablespoon
How to prepare coconut rice? Follow the recipe:
- Wash rice in a cold water.
- Chop garlic and ginger. Garlic is to be finely chopped up or skipped through garlic press, ginger should be cut into small pieces.
- Fry ginger and garlic with a tablespoon of vegetable oil in a deep frying pan on low heat for one minute.
- Add rice, salt and sugar and mix well so that each grain is covered with fragrant oil. Cook, stirring, for a few minutes.
- Pour coconut milk and water. Rice should be covered with a layer of liquid with thickness of about a finger.
- Make it boil, cover with a lid and cook on low heat for 15 minutes like common rice.
- After 15 minutes turn off the heat and leave the rice under the lid for another five minutes.
- Serve the rice sprinkled with coconut flakes.
Now let’s observe another Nigerian coconut rice recipe
The suggested recipe is not very different from cooking regular rice, just five minutes and your rice is tender – add a couple of generous spoons of coconut cream into the almost finished garnish.
Coconut rice ingredients:
• dry long grain rice (Basmati or Jasmine), 1 cup (or 200 grams)
• coconut cream, half a cup
• water, 300 ml
• ground white (or black) pepper, 1 tsp
• salt, 1 tsp
Firstly you need to bear in mind, the main ingredient (rice) must be washed (preferably several times).
Then in a saucepan you need to have boiling water in which you need to cook the rice, put in it washed rice, stir once.
Make water boil again, make the flame more intense, cover the pan with a lid and cook the rice for 10-15 minutes (this depends on kind of a hob, gas pressure, thickness of the pan walls, and other factors that affect the speed of this process), in general, it is a good idea to check the rice after 10 minutes of its cooking). During the process of cooking you can’t stir the rice! The rice should absorb all or nearly all the water.
Add to the pan the following ingredients: rice, salt, ground white (or black) pepper and coconut cream. Gently stir the rice again and cover it, cook for another 5-7 minutes. Then remove the pan from heat and without removing the lid, just leave it for 10 minutes. After that, rice can be used as a side dish. If you cook rice in stock or are not going to use it in the next few hours, gently stir the rice and place in a storage container. To ready-cooked rice you can add some flavors, put in a pan under the lid after removing it from heat, cut thin ringlets green onion or a few green leaves of Basil or cilantro. For 10 minutes, until the rice is “resting”, its scent will get enriched with aromas of herbs.
Cooked rice is to be put in some cups and served as a delicious garnish. This crisp and fragrant rice will make your meal really unforgettable.
And what about fried rice recipe?
Nigerian coconut fried rice just can’t make you stay away as it is so delicious and attractive, don’t you think so? If you don’t agree with me, then you just haven’t tasted it.
Well, it is cooked from common Nigerian fried rice but with the addition of some special secret ingredients. What are they?
Definitely you may guess that they are the following: coconut milk or shavings or oil. Quite simple, isn’t it?
Everything depends on your preferences as if you want to make it very flavoured and saturated, this way you need to add both coconut oil and shavings, but if you are interested in getting something more tender, you may use just coconut milk and that’s enough.
What about ingredients for fried rice recipe?
The majority of them is as follows – the same as when you cook simple coconut rice. However, you may need some peculiar additives, such as: coconut flesh or meat, chicken stock or broth, shrimps, carrots, peas, beans, onion, sweet cornflakes etc.
So as to make your dishes much more tastier I will give you some tips to follow.
Tip 1. Parboil the rice
This is needed to be done in order to avoid starch influence on rice – if you forget about this important step, the rice begins to clump together. What’s more, the oil from coconut clumps it and makes it much more sticky. Prevent these unpleasant consequences just listening to my simple advice.
Tip 2. Blanching of vegetables
This procedure is very essential in case you want to make your vegetables colour stay as vibrant as it was before their cooking. (for doing this you need to put your vegetables in boiling water for 3 minutes and then placing them in cold water)
However, if you are fond of crunchy vegetables, you’d better not go through this procedure.
Tip 3. When cooking the rice the water should be at the same level with rice
When the rice is ready, there isn’t any water in the pot. If you didn’t use any stock, but used some water instead, you need to add seasoning in a double portion.
